For this special evening event, Chef Mawda has curated a magnificent multi-course vegan menu featuring fresh ingredients, fragrant herbs, and traditional spices.

- Avocado Hummus โ Creamy chickpeas blended with fresh avocado, tahini, garlic, lemon juice, and olive oil, served with warm pita.
- Vegan Samosa โย Crispy pastry shells stuffed with a savory blend of spiced vegetables and artichoke hearts, fried to golden perfection.
- Mediterranean Okra Served with White Rice โ Tender okra deep fried and crispy seasoned potato cubes served over a bed of fluffy white rice.
- Syrian Lentil Pasta (Harak Osbao)โย A rich, flavorful traditional Syrian comfort dish featuring brown lentils, pasta, caramelized onions, cilantro, garlic, olive oil, tamarind juice, and a drizzle of pomegranate molasses.
- Vegan Mixed Nut Baklava โ Layers of crisp, flaky phyllo dough filled with pistachio, cashew, almond, walnut, coconut and warm spices, finished with sweet syrup and rose water.

Meet Chef Mawda Altayan
Mawda Altayan is a celebrated Syrian chef, community leader, and Supper Club Ambassador for the Fork in the Road Foundation who has become an essential pillar of the St. Louis culinary landscape. Through her extraordinary cooking, she shares the rich cultural heritage and warm hospitality of Syria while serving as a bridge between cultures.
A native of Damascus, Mawda arrived in St. Louis after fleeing the Syrian civil war and rebuilding her life from scratch. She was the very first chef to launch a community supper club event in the program’s early days, paving the way for dozens of immigrant and refugee women who followed in her footsteps. Known for her vibrant vegan and vegetarian Syrian specialties, her dishes showcase deep family traditionsโfrom fragrant lentil pastas and golden samosas to hand-crafted baklava.
As an ambassador and mentor with the Fork in the Road Foundation, Mawdaโs inspiring journey from displaced newcomer to established culinary leader demonstrates the transformative power of food, resilience, and community support.
