MEET CHEF

Ghaida Masrabi

Ghaidaa Masrabi is a talented Syrian chef and entrepreneur who has become a cornerstone of the St. Louis culinary community. As a lead chef for the Fork in the Road Foundation, she is dedicated to sharing the warmth of Syrian hospitality while building a sustainable future for her family.

Originally from Damascus, Ghaidaa arrived in St. Louis in 2016. She is best known for “Ghaidaa’s Table,” where she introduces the community to the traditional Syrian breakfast—a multi-course ritual designed for conversation and connection. Specializing in the bold flavors of the Levant, her menus feature handmade falafel, savory manakeesh, and authentic spreads that turn strangers into friends.

Through her work with Fork in the Road, Ghaidaa’s journey from refugee to established business owner serves as a powerful inspiration for other women in the program.

APPETIZERS

Hummus — A Blend of chickpeas, garlic, and lemon. Served with olive oil and pita bread. Have it served with beef shawarma, chicken shawarma, or saujok (Lebanese sausage vegan or regular)

Baba Ghanoush — A blend of roasted eggplant, tahini, garlic, and lemon. Served with olive oil and pita bread.

Grape Leaves — 6 pieces of grape leaves stuffed with tomato, onion, parsley, and rice.

Falafel — 4 crispy fried pieces of chickpeas ground with parsley, onion, and garlic. Served with tahini sauce.

Foule Mudammus — A delicious soup blend of fava beads, garlic, lemon, and olive oil, Served with pita bread and a plate of veggies and olives.

Lebneh — Lebanese yogurt served with cucumbers, olives, and tomatoes, Sprinkled with zaa’tar and served with pita bread.

Feta and Olives — A plate of feta cheese and olives drizzled with olive oil and served with pita bread.

Kibbeh — 3 fried mouth-watering pieces of a beef and bulgar shell stuffed with more ground beef and onions, Served with yogurt sauce.

Cheese Samosa — Filo dough stuffed with mozzarella, feta and parsley and then deep-fried to perfection.

Vegan Kibbeh — 3 fried mouth-watering, pieces of a vegan meat and bulgar shell stuffed with more vegan meat and onions, served with tahini. ***Add hot sauce

Lentil Soup – Lentils, onions, and spices topped with onion, parsley, and sumac. ***Add chicken

Fatoush Salad — Cabbage, cucumber, radish, sweet pepper tomato and parsley topped with pita chips, served with homemade lemon & olive oil vinaigrette. ***Add chicken

SIDES

Spicy French Fries — Drizzled in homemade spicy olive oil, cilantro, and hot pepper dressing. Served with garlic and ketchup.

Saujok Homemade spicy lebanese ground beef and lamb sausage wrapped in pita and drizzled with garlic, hummus, and tahini sauce.

Vegan Saujok — Our classic saujok now with vegan meat.

Mahalabia —Milk, corn starch, sugar, rose water. Decorated on top with pistachios, almonds, and coconut.

Falafel — Falafel wrapped in pita with hummus and tahini sauce.

Taste of Lebanon  — Beef and chicken shawarma on a bed of rice, with one kibbeh, one falafel, tabouli, hummus, and baba ghanoush. Served with garlic sauce, tahini sauce, yogurt sauce, and pita.

Vegetarian Mezza — Tabouli, falafel, grape leaves, hummus, and baba ghanoush served with pita.

Mixed Grill – Lamb kabob, beef kabob, and one piece of both chicken and beef kafta.

Iraqi Kabobs – Ground beef seasoned with Iraqi spices, grilled and served with garlic sauce.

10” Vegan Mozzarella Spinach Pie – Topped with spinach and vegan cheese.
